100% Arbequina Olive Oil
Arbequina olives produce the mildest olive oil with a light, buttery, fruity flavor that has a mild peppery finish.
100% Hojiblanca Olive Oil
Hojiblanca olives produce an olive oil that is rich and balanced. The flavor will starts with unripe fruits like green apple and banana and finishes with spicy notes like cinnamon and black pepper.
100% Picual Olive Oil
Picual olives are the most common olives grown in Spain. They produce an olive oil with a bold, earthy flavor that starts with grassy, herbal notes and finishes with black pepper.
Our Infused Olive Oil
Infused olive oil is made by steeping herbs, spices and fruits in oil after it has been pressed. All of Casa Juan Marcos’ Infused Olive Oils start with 100% Picual Extra Virgin Olive Oil that are then infused to create three distinct flavors.

Mara de Miguel
Our relationship with Mara de Miguel began at a local tasting in Córdoba, and it was quickly evident that, for Mara, olive oil isn’t just a business—it’s in her DNA. Her heritage is tied to one of the world’s most prestigious olive oil producers, Almazara de la Subbética, which grew out of a business founded by her grandfather. Growing up in the heart of the groves, Mara spent her childhood working alongside her parents, immersed in every aspect of the craft—from spring pruning to the fall harvest.
As an adult, Mara branched out into the world of wine, where she now holds a WSET Diploma and a Gold Diploma from the International Sommelier Association. After 20 years in the wine industry (five of those in London), she returned to Córdoba to meld her passions for food, wine, and olive oil to become a fierce advocate for her home region. Whether it’s an olive oil tasting, a wine pairing dinner, or a trip to the Córdoban countryside, Mara shares her love for her home with energy, knowledge, and laughter.

Francisco Hidalgo
Francisco Hidalgo (aka Kiko) is a fourth-generation olive oil producer who has dedicated his life to the olive culture of Córdoba. After two decades as a Key Account Manager for companies across the Spanish olive oil industry, Kiko used olives from his family groves in Santa Cruz to launch his own brand, Arbonaida.
Drawing on this deep family heritage, Kiko’s mission is to bring what he calls the “best olive juice” to the world. We are proud to partner with Kiko to bring the authentic taste of Córdoba directly to you.

Single Origin Olive Oil from Córdoba, Spain
At Casa Juan Marcos, we believe the best oil comes from a community, not just a corporation. Our private label is a curated selection of the finest olives from small-scale Cordoban farms. These olives are brought to local co-op mills (almazaras) where they are cold pressed before bottling. This collective approach allows us to select only the highest quality fruit from each harvest, resulting in an olive oil that is rich in character and deeply rooted in Spanish tradition.
Why Our Single Origin Matters
100% Cordoban: Every drop of oil is grown, pressed and bottled in Córdoba, Spain.
Supporting Community: By sourcing from small family farms, we help preserve traditional biodiversity and local livelihoods.
Local Milling: There is a certain pace of life in Córdoba during the olive harvest. Olives are harvested in the morning then taken to a co-op mill to be pressed into Extra Virgin Olive Oil. The next day the process repeats until the harvest is complete.
First Cold Pressed: The first requirement of extra virgin olive oil is that it is extracted by mechanical means only without chemicals, extreme heat or refining.
